The basis of this recipe is raw beetroot sliced very thinly, all the other ingredients can be exchanged for something similar (some suggestions provided)
3 raw beetroot (sliced carpaccio style - very thinly)
handful of walnuts (or pecans, hazelnuts)
fresh goats cheese (or feta or another crumbly cheese)
3-4 dandelion leaves chopped small (or rocket)
dressing: olive oil, apple cider vinegar and a teaspoon of maple syrup
Place sliced beetroot on a plate. Sprinkle on cheese, nuts and leaves.
