Aubergine Dip


1 large aubergine baked in the oven in its skin
1 dessertspoon light tahini (sesame seed paste)
Juice of 1 lemon
olive oil
pinch cumin


Put all ingredients in a blender and blend to make a smooth paste (add as much water as needed to do this. Serve with salad or as a dip or to accompany other grains and vegetables.
