Cashew Nut & Shiitake Loaf


250g raw, unsalted cashew nuts chopped roughly in a blender
50g of bread crumbs
1 red onion, chopped
olive oil
4-5 shiitake mushrooms, chopped
100ml water
1 egg, whisked


Set the oven to 180 degrees.

Saute the red onion in some olive oil until soft, add the shiitake for a minute and let them soften a little (I always put a lid on the pan and keep the temperature low while doing this stage)
Add the chopped cashews and bread crumbs and mix in together. Add in the water.
Add in the egg to bind all the ingredients
Add salt and pepper to taste

Put the mixture into a cake tin and bake in the oven until golden

Serve with lots of veggies or salad or use as an alternative to meat for a roast dinner...
