Pak Choy & Avocado Salad with lemon, ginger and turmeric dressing

1 Pak choy - chopped finely

Juice and zest of half a lemon

Extra virgin olive oil

Ginger root

Turmeric root

1 avocado, chopped

sunflower seeds



Mix the dressing in a salad bowl - olive oil, lemon juice and then grate in the lemon zest, ginger root and turmeric root (quantities to your taste)

Add in chopped pak choy and toss salad well to cover all leaves. Leave to settle for a few minutes then add chopped avocado and sunflower seeds.

Serve as a side salad to any dish.
