1 cup of quinoa cooked in 2 cups cold water
2 large handfuls of green beans - steamed and chopped in pieces
150g feta - chopped in small pieces
handful walnuts - crushed
2 tablespoons extra virgin olive oil
1 dessert spoon apple cider vinegar
seasoning to taste
Having cooked the quinoa and beans all that remains is to mix all the ingredients in a big bowl and serve warm or cold.
