Ingredients (serve 4)
1 head of celeriac - peeled and made into spaghetti with machine
1 red onion diced
3 courgettes diced
roquefort or similar cheese
Cook the red onion in some olive oil and later add the diced courgettes and cook until softened.
The celeriac can be cooked in tiny bit of water or oil in a pan with the lid on... only takes about 5 minutes
Serve on a plate - celeriac first, top with courgettes and then sprinkle blue cheese and walnuts and serve
