Chocolate Mousse - variation with real chocolate

I can't find a cacao powder that I like at the moment, so I decided to try my recipe using 100% cacao chocolate instead and the result (in particular the consistency) was even better!

Ingredients (serves 4)

1 mug raw unsalted cashew nuts soaked overnight in1 mug cold water
80g 100% cacao chocolate
2 medjool dates



Put the cashews with their water, the broken up pieces of chocolate (not melted) and the dates in a high speed blender and go for it.

Put in the fridge for a couple of hours at least to set.
