Fruit cake - 100% plant-based

Ingredients

450g dried fruit (I used a mix between sultanas, currants and cranberries)
1 mug tea - rooibos is perfect - even a rooibos with some spices in
2 mugs wholemeal flour
1 tsp baking powder
1 tsp cinnamon
1 tablespoon of chia seeds
3 tablespoons water
dash of plant milk (I use almond milk but oat or rice ok too)

Directions
Place the dried fruit in a large bowl and pour over the mug of tea. Leave standing for several hours or overnight.

The next day, set the oven to 150 degrees centigrade.

Mix the chia seeds in the water in a glass and stir well - leave to stand for 15-20 minutes.

In the meantime add the flour, baking powder and cinnamon to the dried fruit and tea and stir well until all covered.

Add in the chia seeds and again mix well.

If the mixture is wet enough and ingredients all mixed well, leave like that. If the flour is still visible then add a bit of plant milk and mix until all ingredients well integrated.

Put in a cake mould and bake for 50-60 minutes

Cool on a wire tray and enjoy this tasty plant based tea-cake!
