A two minute recipe today - because lets face it we don't always have the time to cook!
1 whole cucumber
3 tablespoons yoghurt (I use sheep)
handful of mint or basil
Put it all in the blender, blend.... and serve!
Put a bit of olive oil on the top, a crumble of feta and a leaf of mint or basil and da-daaa!
This is just perfect for the heatwave weekend ahead....
