Birthday Cake...

Ingredients

butter for greasing cake tin

125g plain flour (I use 65% wholemeal)

1 tsp baking powder

1/2 tsp ground cinnamon

50g unsalted butter

75g sultanas

400g apples chopped in small pieces

4 large ripe bananas (500g)

1 egg beaten

 

Directions

Preheat oven to 180 degrees C and grease tin (I don't use fan oven, but if you do you can probably reduce cooking time)

Sift flour and baking powder into a large bowl and add cinnamon.  

Cut or break butter into small cubes and rub into the flour so it resembles fine breadcrumbs.  

Stir in the sultanas and apple pieces and make a well in the centre of the mixture.

In a separate bowl, mash the banana and stir in the egg - I usually mix them together with a soup mixer!

Pour the banana mixture into the flour mixture and fold in.

Pour mixture into cake tin and place in oven.  Turn oven down to 160 decrees C.  Bake for 60-75 mins.  Check by inserting a skewer, which should come out clean.

Remove tin from the oven and allow to cool for 5-10 mins. Turn out onto a wire rack to finish cooling.
