Spiced Cauliflower - Zero Waste!

A whole head of cauliflower - including leaves and stems.
1 dessertspoon ground cumin
1 dessertspoon ground coriander
chilli flakes (depends on how hot you like it)
few cloves of garlic in their skin
olive oil
fleur de sel & black pepper


Heat the oven to 150 degrees Celsius.

Take the florets off the cauliflower and break into bite sized pieces.
Chop the leaves into small pieces and the stems into small chunks.

Put them all on a baking tray with the garlic (still in skin) and cover with spices and oil, salt and pepper. Mix around until all the cauliflower is covered and then bake in the oven until golden brown (about 30 mins).
