Spinach and eggs

This is one of my favourite ways to eat eggs and is a regular weekend lunch in our house


1 onion
Lots of fresh spinach (frozen will give too much water)
As many eggs as people want


hop the onion and let it brown in some olive oil in a deep frying pan (it needs to be a pan you can put a lid on)

When browned add in the washed and roughly chopped spinach and let it wilt in its own water (put the lid on the pan)

When it has wilted, make small holes in the spinach and break in an egg into the holes. Put the lid on the pan and let the eggs cook into the heat to how you like them. 


These are a big hit with the kids!
