Sweet potato dip/spread


2 medium sweet potatoes baked in the oven in their skins
4-5 sundried tomatoes
1 whole ripe tomato
1 spring onion
a pinch of paprika
olive oil


Simply put all ingredients in a blender and add enough water to be able to blend into a smooth puree.
Garnish with the sliced top of the spring onion and serve on bread or with salad or as a dip.
