Sweet Potato, Red Pepper and Fennel Stew


  • 2 leeks, chopped

  • 1 fennel bulb, sliced finely

  • 1 red pepper, chopped

  • 2 sweet potatoes, peeled andchopped smallish

  • boiling water

  • 2 bay leaves

  • chopped parsley to garnish



Could not be easier... start with leeks in some olive oil and then add ingredients in order listed above

Add enough water to stop sticking but not too much

Cover and simmer until vegetables are soft

Serving suggestion

Serve alone or with rice, sprinkle with some parsley
