3 large raw beetroots (peeled and cubed)
1 onion (chopped)
1 potato (cubed)
1 tsp cumin seeds or powder
water with small amount of stock (if desired)
pinch of fleur de sel and black pepper
Goats cheese, parsley, coriander and a swirl of olive oil to serve.
Saute the onion in olive oil for a few minutes and add the cumin seeds or powder.
Add the chopped beetroot and potato and cover with water. Cover and leave to simmer until the beetroot and potato are soft.
When cooked, mix until smooth in a mixer...
The soup can be served warm or chilled - both delicious...
