Chilled Tomato Soup

Ingredients (serves 4)

5 fresh tomatoes (very ripe is good)

1 small courgette

1 red pepper (de-seeded)

splash of red wine vinegar

tablespoon olive oil

5-6 basil leaves

cup of water (or enough to dilute to thickness you want)

pinch salt and plenty black pepper



The last very important ingredient is a good blender - as you simply put all the ingredients in and press go. I then poured it into a bowl, added a few ice cubes and put it in the fridge for an hour.

Served with olive oil and basil on the top... it was really tasty and refreshing.
