I head of Cauliflower chopped (including green leaves)
2 leeks, rinsed and chopped
mixed fresh herbs (I used parsley, mint and chives)
fleur de sel
manouri or feta cheese to garnish
Saute leeks in some olive oil until soft, add cauliflower and let it soften a little then add water to cover and season with salt and black pepper. Cover until cauliflower soft but not mushy.
Blend into a soup
serve warm or let the soup cool down and serve cold with fresh herbs, a drizzle of olive oil and cheese
