All the green tomatoes in my garden that had no chance of ripening!
1 red onion
handful of sultanas
2 dessert spoons of non-refined cane sugar (coconut sugar would work too)
2 dessert spoons of apple cider vinegar
Start with red onion sliced into some olive oil, let it soften...
Then start to add in the other ingredients starting with tomatoes and apples... let then soften.
The sultanas, sugar and vinegar...
Cover and simmer for about one hour
Put in jars and enjoy with hard cheese (my favourite)
