Raw Energy Bites!


1 mug of raw unsalted cashew nuts soaked in 1 mug of cold water
4 medjool dates


After soaking the cashew nuts for about one hour - throw away the excess water

Put in a blender or food processor with the dates and mix on a low-ish speed until mixture it smooth (you may need to stop a few times to scrape around the edges)

Press into small balls or into a mould or into bars - whatever you like. Little ones can have a lot of fun doing this!


Refrigerate for at least one hour - I store mine in an airtight box in the fridge.
