Tempeh with veggies and nuts


This was my first selection of ingredients:

Garlic and ginger chopped finely + a pinch of chilli
Coconut oil for frying
White cabbage, red pepper and shiitake mushrooms, sliced
Tamari sauce
Cashew nuts
I also then ended up adding:
a tablespoon of crunchy peanut butter
juice of a lemon


- fry garlic, ginger and chilli gently in the oil
- add chopped tempeh - I find it crumbles into pieces and that's ok
- add veggies and continue for a few minutes
- create a marinade with peanut butter, tamari in some boiling water (few spoons) and lemon juice - season to your tastes
- add into mixture with Cashew nuts and let it cook for a bit

I served with brown rice

Delicious with a Taras Boulbas from my favourite Brasserie de la Senne.. ;-)
