Apple and Cinnamon Cake


125g coconut sugar
250g self-raising flour
50g butter, diced
3-4 apples (bio/organic) with skins left on - cut into small pieces
1 large egg
100ml plant milk - I used almond
pinch seasalt

- preheat oven to 175 degrees
- place coconut sugar and flour in a large bowl, rub in the butter
- add the apples, cinnamon (about 1 tsp) and pinch of salt, combine together
- mix egg into milk and then add liquid to mixture

- bake for about 45 mins
