Zesty Cashew Cream with berries and mint

1 mug raw unsalted cashew nuts soaked overnight in water
juice and zest of 1 large lemon and 1 lime
1 dessert spoon of maple syrup or 1 medjool date

To serve: blueberries, raspberries, red currants... and a sprig of mint


Drain the cashew nuts and discard water
Add to blender with juice and zest of lemon and lime and the maple syrup (organic grade C - see below)
Blend! With vitamix you may need to use the 'basher' to get it all mixed together. You can add some water if too thick... but careful not too much

Serve into small dishes and garnish with berries and mint
